In my veg box this week are half a dozen green chillis. What shall I do with them? I can't eat them all at once, although I could make an enormous batch of something to freeze (chilli, perhaps?!) All suggestions welcome (except icecream!)

the dead simnple answer is that nothing freezes better than chillis. I bought a big bag Friday as we passed the Asian grocers, bunged them straight in the freezer. Run them under a tap for a second and they are defrosted and as good as new.

Tie them by the stalks to a bit of string and let them dry. They dry really well.

Or split one and soak it in a third of a bottle of vodka. Chilli vodka is great.

Then there's the option of making a chilli relish...

Or, as Jema says, freezing them.

Just a thought - can you freeze peppers as well? I know you can dry them, but frozen would be more useful I think.

I've got a few peppers in my freezer at the moment. I mainly use these as toppings for pizzas (not that we have them that often) or for stir-fries.

I was going to suggest putting the chillies in vodka - a while ago I was given a big bag of red and green chillies, I sliced them and put them into a sterilised kilner jar with some white wine vinegar, again these get used for pizzas and for nachos. Used some when I made the last batch of hot salsa.
