Ingredients


  • 12oz cranberries

  • 6oz sugar

  • 1 large or two small oranges.

  • 5 tbsps port/sweet sherry.




Recipe


  1. Dissolve sugar in orange juice and 4 tbsps sherry/port.

  2. Add orange zest and cranberries.

  3. Cook until slightly thicker than you want.

  4. Add remaining tbsp of sherry/port.




Comments


Serve with poultry, game, cheese or anything else you fancy really. Probably not smoked mackerel in my view but the choice is yours...
