There's a guy in the pannier market here who sometimes has duck eggs for sale. Is there anything they're particularly good for?

My mum liked baking with them, I liked them boiled. What breed of duck are they from?

No seriously. Try them. I think duck eggs are soo much nicer than hens eggs. I like them boiled with a little salt. Since they are bigger you need to boil them a little longer than you would normally with large hens eggs. A soft boiled duck egg is simply yummm! IMHO, YMMV/etc.

Very good for baking. They don't make merangues though.

Fried on toast are delicious.

Scrambled they're fantastic. As an occasional treat with butter, crem and flakesof truffle scrambled duck eggs are unsurpassed.

Poached, on well buttered granary bread with some wilted spinach and lots of black pepper.

They do make ace cakes as well, no idea why.

They make the best egg butties. The yolks seem to be bigger than hens' eggs.
The received wisdom is that you shouldn't use them raw or part-cooked, as ducks lay their eggs in damp places and they tend to be muckier. That said, a soft-boiled duck egg is a joy to eat!

That sounds soooo yum. Definetly purchasing some duck eggs over the weekend.

I usually have them fried on toast or boiled and in a salad.

I think it is something to do with the make up of the albumen.

Which may explain why they are good for baking but not meringues
