Ingredients
1lb granulated sugar
2oz butter
1/8 pint single cream or evaporated milk
1/8 pint fresh milk
2oz golden syrup
Recipe
Put all ingredients into a big heavy pan.
Stir over gentlr heat until sugar is dissolved.
Turn up heat and bring to the boil, stirring all the time till 240C or when a drop tested in cold water forms a soft ball.
Cool for a little while and then beat with wooden spoon until creamy.
Pour into baking tin and cut up when cold.

If you havn't got a sugar thermometer(I havn't), boil until the mixture goes a bit of a darker colour and starts to come away from the edges of the pan more when you are stirring.
I make mine in a pressure cooker - without the lid on! as it is nice and big as the mixture does rise up when boiling.
