Ingredients
450g gooseberries
15g butter
1.5 tbs sugar
Grated zest and juice of half an orange
s&p
Recipe
Top and tail the gooseberries.
Put berries, butter, sugar and orange juice into a non-reactive pan.
Cover and stew over a low heat until the juices begin to run.
Remove the lid and raise the heat slightly.
Add the orange zest.
Simmer until about the consistency of tomato ketchup.
Season with s&p.
Sieve or not according to taste.

You can add star anise or crushed coriander seeds while it's cooking if you like, but I prefer to make it plain then add flavours to batches as I use them.
