I had printed out some really great instructions / pictures on preparing / gutting a pheasant - and have managed to lose it - can anyone point me in the direction of a good book with detailed pictures of the previous instructions. Many thanks

Its not a direct answer I'm afraid, but I never bother, we mostly get roadkill game so we just 'unzip' the skin and cut out the leg and breast meat, leaving all the icky bits safely inside. Not much help if what you really want is a nice roast peasant, but a trick worth knowing for when you have a glut or something slightly squashed to deal with

the only bits i use are leg and breast meat ,i leave the rest for foxy .mine are road kill or dog foraged .
shot birds are still best prepared as above but with the added task of "spot the hole /find and remove the shot "
some of my stews have been jointed by impact

how cool is that

the bits compost or can be used in other ways .
from whole : split skin down the breast ,turn bird inside out , pull .
roasted is rather dry for me .
i wont ever give a pluck for a pheasant
