Ingredients
2 egg yolks
1tbsp Dijon mustard
Salt and pepper
300ml sunflower oil (or other neutral oil)
100ml light olive oil
juice of 1/2 lemon
1-2tbsp warm water
Recipe
Make sure that all ingredients are at room temperature.
Put egg yolks, mustard and s&p in a mixing bowl.
Beat with a balloon whisk until thick.
Gradually add the oils, beating continuously.
Add a bit of lemon juice (still beating).
Keep going until you\'ve used all the oil and lemon juice and the mayonnaise is thick and glossy.
If the sauce is too thick you can let it down by whisking in some warm water.
Comments
If it splits start again with a new egg yolk and whisk the mixture in a bit at a time.
