Would you do this as for cordial ?
( in bottles ,20mins at 190F after raising temperature from cold, in a large pan up to the bottles' shoulders)

I like the ideas of 1.not using plastic bottles (as I would when freezing) and 2. not running the freezer when we go away for a long trip

We use a pasteuriser, 20 mins at 85 (those newfangled Celsius jobbos)

so basically the same...how does a pasteurizer work differently to the saucepan and thermometer method?...

It's the same, just has an electric element and a built in thermostat and timer. Much less damage when you forget you've got a batch going...
