Ingredients
1.75kg quinces
3 lemons, rind and juice
3.5l water
Sugar
Recipe
Wash quinces and chop.
Simmer covered with 2.25l water, lemon rind and juice until tender. About an hour.
Strain through jelly bag.
Return pulp to pan and add remaining water.
Bring to the boil, simmer for 30 minutes, then strain.
Mix extracts together and measure. Add 450g sugar/500ml juice.
Return to boil and boil vigorously until setting point is reached.
Comments
You need to be quite gung-ho about setting point in my experience.
Good with roast pork amongst other things.
