Ingredients
1tbsp fresh white breadcrumbs
150g shelled walnuts
1 clove garlic
50g grated Pecorino
Salt
1tbsp chopped marjoram
6tbsps olive oil
4tbsps strained Greek Yoghurt
Recipe
Soak breadcrumbs in water for 10 minutes, then squeeze dry.
Remove as much of the skins from the nuts as you can without going mad.
Pound the dry ingredients in a pestle and mortar to a fine texture. Or cheat and use a food processor.
Slowly add oil, stirring constantly.
Finally stir in the yoghurt.
Comments
If you use a food-processor rather than a pestle and mortar then add the cheese at the end. Over-processing will leave you with a gluey sauce.
