Hiring sounds an excellent idea *if* you can sort out deposits.
Regarding dealing via butchers, if its "their" customer, they (the butcher) may want to be the hirer, to keep you distant from their customer.
Or maybe butchers aren't that business savvy... !
However, to maximise your return, and party admissions, surely the thing to do is to supply a complete "turnkey" (turnspit?) service, whereby you deliver, supply and cook the thing (after all, experience, expertise, client risk for first-timers... "I'll look after the whole thing for you").
Only snag is that it puts you into catering, hygiene regs, premises questions... BUT - I wonder if that could be finessed by the animal being bought by the client from your butcher, who delivers it direct to them, and includes a commission for you. Loses client ownership though... |
