What's the best recipie for bread and butter pudding? It's been ages since I had any so I think I'm just going to have to make it myself

I like Hugh Fearnly Whittingstalls - it's in his River cottage year book (although I rarely bother with fruit in mine) I can get the recipe when it gets dark, if you need it, but I'm enjoying the swallows just now!

Nice white bread, crusts on, thickly buttered and cut into triangles.

Eggs, milk and a little cream if you're posh mixed into a nice custard.

layer bread in dish sprinkling caster sugar over each layer as you go. pour over custard until it comes up three quarters of the mix. Squish in bread, cover and leave to soak whilst oven pre heats.

cook at 180 until browned and risen.

I never bother with measurements when making this

Needs a few nice plump raisins or sultanas - but never on the top as they catch.

No - just sprinkle them on.

Made with panetone is good, and Sean sometimes makes it with McVitie's ginger cake and stem ginger, which make a nice change, but I like the basic version best.

add vanila extract (or use a pod by warming in the milk first)
Sultanas only but never on the top. Brown sugar on the top. 4 standard sized eggs to the pint or milk. cinimon, nutmeg or mixed spice on the top.
