This weekend I had some friends over so I cooked a ham in coca cola which was very nice (its a nigella lawson recipe)

we got a nice piece of ham from the butchers about 2kg so it would need 2 and 1/2hrs cooking

first it was boiled for about 1/2hr in water to remove some of the saltiness

the remaining cooking time was done in coke, I added an onion cut in half the mostly covered the joint in coke, this took a little over 2 litres and boiled it for 2hrs as I don't have a lit which fits my largest pot any more due to dropping it I kept topping the liquid up but if you have a lid covering it would probably be a good idea

once it had been boiled I took the joint out and removed the skin leaving a thin layer of fat. The remaining fat was scored, studded with cloves the covered first with black treacle (about 2tbsps) then had demera sugar and mustard powder sprinkled over it and put in a very hot over (225C+) for about 10 minutes. It came out lovely and glazed

The book says you can boil it in advance then glaze it just before serving if you wish if you do that it is better to put the joint in at a lower temperature for about 45minutes so it heats through

So far we have had some for lunch, some in a risotto for tea and I have some very nice ham and mustard sandwiches for my lunch today

its wonderful, it produces a lovely moist sweet ham which I at least really like

american in origin unsurprisingly

Joint & coke? We may be getting more Google hits than usual today.

i have three hams in a Coke brine at the moment at home.

Tahir's unlikely to be using any ham recipes any time soon, so I wouldn't worry about his remarks.

you are curing them in coke first that could be interesting, how long do you leave them for? and how do you then cook them

It is a two-week cure, the recipe came from the sausagemaking website. The brine is about 15% coke. i suppose if you steeped it in coke only you would have nothing left at the end!

I saw the recipe in one of Nigellas books, I'm tempted to try it based on this review

I saw it too, it is in the 'Trashy' chapter, from which I tried the sweetcorn bake thingy - absolutely gorgeous it was. Actually, would go really well with a ham...

I would definitely recommend it, it is very nice

she recommends using the left over liquor for a black bean soup but I have never tried that
