smoked haddock works but whatever you have, cut into fine goujons

mix a small amount of spicy masala of choice

shred a small amount of cabbage

using a sheet of nori seaweed and some dark soy make a compact roll and cut it in 3

beat a whole egg
season some spelt flour

coat rolls several times, resting and rolling at the flour stage
leave enough egg and flour for the last coat as ...... the last one is egg last after a final flouring

heat a deep oil to 175C , give rolls a last coat and add them one at a time with the fork you lifted them from the last egg dip with

they might sizzle a bit at first
once they are all in let the oil reheat to 175 and give them about ten minutes until golden brown and crispy

light sauce of choice

they have good texture no pastry to make and they do not fill with oil like most of my samosas and spring rolls

you can choose and judge ingredients for yourselves, the method is sound with nori, spelt flour and egg
