After the sucess of the previous sale of two Dexters this way, I now have another steer available as two halves, toward the end of the month. It is very small, so I am only expecting to get about 40kg of beef per side, so it will be best sold in two halves.

I will also have some Kerry Hill lambs & hoggs available as halves or whole, packaged in the same way ï¿½45 per half.

Let me know in the usual way if anyone is interested.

Terms of sale

The above offer is for the sale of two halves of one Dexter steer carcass at a price of ï¿½5-00 per kilogram final weight*1.

The deadweight measurement is the point of sale after which the animal becomes the buyers responsibility.

Confirmed orders may be cancelled where either a replacement buyer is successfully provided by the non-completing buyer, or where a replacement buyer is otherwise available. Cancelled orders cannot be accepted after the point of sale.

Where an incident of force majeure occurs, neither I nor the buyer can be held responsible for replacement. Examples of force majeure include the death of either party, the pre-slaughter death of the animal, or the condemnation of any part of the carcass for public health reasons (including the pre-slaughter loss of official animal identification).

I*2 am offering the beef for sale as half carcasses, the cost of butchering is inclusive in this price.

Each half is available for sale as one lot to any individual or group of individuals who are contributors on the downsizer.net forum or the rivercottage.net forum.

Each half will be available in wholesale packaging*3 as reflected by the price. Information as required by the Beef Labelling (Enforcement) (England) Regulations 2000 will be provided with each half carcass.

Offal from the animals will be available if requested. This includes the heart, two kidneys, lungs, tail and liver. Only the liver may be split between lots.

Payment is due 14 days from the date of invoice. Invoices will be generated once weights are available and payment at or before the time of collection will be acceptable*4

Payments for halves shared by a group of individuals may be either supplied wholly by one of those individuals or in part from each individual. Where full payment is not available the half carcass will not be released.

Collection is the responsibility of the buyer, although an informal arrangement between contributors is encouraged to save transport costs & time. Any delivery costs may be added to the invoice & the contributor(s) collecting reimbursed*5.

A full traceability record can be provided upon request. This includes the parentage of the animal, any movements throughout its lifetime and any medication supplied throughout its life*6

*1 Final weight is as provided by the butcher & includes beef joints, steaks, cubed meat & mince. This does not include bones & offal which can be provided on request free of charge, appropriately split between halves or more if available.
*2 ï¿½Iï¿½ as a representative of ï¿½Rosewood Farmsï¿½, to which all payments can be made out.
*3 No individual wrapping, packaging or labelling. Each will be presented in a number of plastic lined cardboard boxes, as divided by the abattoir. An inventory can be supplied if required.
*4 the point at which the order leaves our premises.
*5 currently proposed as ï¿½20 per half carcass, subject to change as per informal agreement.
*6 Where the animal is home bred (which this animal is not), otherwise as much information as is available will be provided.

Really glad its working for you Rob - when do expect the lamb to be available (ish) and could I have it butchered to requirements?

Can I just say that the beef is excellent. Iï¿½ve had one of the forequarter joints (which I overcooked

) but it was still tender and tasty. I've also cooked a curry with the braising steak and made burgers twice, the best I've ever had.

Today I'm having home-cured corned beef from the brisket (very nice) and last week i had some of the ox liver. Soaked in milk and then sauteed it was lovely and subtle. Tonight I'm going to make a slow-cooked tagine with the shin.

It was no hassle meeting the Downsizer courier and took me about 90 minutes to weigh, bag and label everything up. A BIG freezer is essential, but the beef is well worth it and very well priced.

Totally agree with Twoscoops - infact the beef is so good - if I had room for it at the moment I'd have another half side.

We've also made burgers with the mince for my nieces birthday bbq - they were gorgeous and brought multiple comments of praise

I also took the bones and once roasted they made some magnificant stock which only served to enhance the mince in a number of bolognese sauces

I've also used a couple of forequarter's as Sunday roasts - thinking I'd have loads let over - unfortunately my family decided they enjoyed it so much it all went.

Lambs really are as & when required. I was going to send some either the week before or the week after the beef (so ready either the week before or the same week), and that I was hoping to get booked in for the end of August/early September pick-up.

I have a few baby lambs that will be ready then, but I would recommend some 1year hoggs in preference to the young ones. I also have some two year wethers for mutton, which are the same price, so you will get a bit more for your money.

Butchering is pretty flexible as to how you want it.

Rob I'm interested in half a hogget - is there any Offal with it? Anybody else from Leeds/West yorkshire interesed in a trip to the far east? Or I could collect for you.

Yes, offal can be split between two halves how you like, consisting of: liver, lights, heart & kidneys.

OK I'll go for a half with bits but hold the knife as I need to sort a Saturday when I can pick up. I'll PM you when I know when I can do this. As my little girl has an obsession with 'manimals' at the moment a trip to a farm will be a plus for her. Anybody else in Leeds/West Yorkshire who'd like me to collect and deliver let me know by PM.

The knife is definately held at the moment- busy with haymaking etc., but also a seemingly complete lack of interest in the beef this time

For anyone else who doesn't know, the Lower Derwent Valley runs for about 25 miles from the ares South East of York to the River Ouse between Goole & Selby. We are about half way along the valley.

I have been in and out having a read but don't post much! Time is the pressure on me, but we are expecting a litter of GOS next week if all goes well I will let you know how it goes.
