i have ordered a whole deer carcass from my game dealer that i will get jacket on in a week or so and we will butcher it ourselves

it has suddenly struck me that the butchery for venison is going to be different than for sheep

anybody ever found a website that will show us where the dotted lines are?

I'll have a check of the deer books at home as I plan to do the same thing with half a beast. Does HFW meat book have any details in?

Sometimes the PDFs don't display by clicking - try right click/ save as on the paperclip attachment symbol, save it to your desktop and it should open then (if you have an Acrobat reader on your machine which is quite likely).

tried that bugs but it wouldn't let me save either

will try at home if i remember

we do have a copy of that american book by the name of what i can't remember that tells you how to do everything from chipmunks to buffaloes fo it will probably be in there anyway


mr nanny ordered a set of knives off e-bay yesterday so we will be all set when it arrives in about a week's time...............

my game cookbook (clarissa dickson-wright) says treat roe deer like sheep so won't be too difficult i reckon

Sean/Guys.

We happened to have use for that Deer Processing doc on Saturday. I didn't do the butchery myself, but t'Other Half and her father followed it and said it was spot on. The photos made it v. easy to follow by all acounts.

have just found this site whilst searching for a venison butchery diagram. have deer outyside in yard, need help butchering it. do you have diagrams of cuts?
