Have almost made some Beef Jerky.

Marinated 1.5Kg of Silverside cur into slithers in a mix of:

Salt, soy sauce, "Zulu" spice mix and garlic powder.

Cold smoked it for about 6 hours, and have started hot smoking it.

Just tasted a little, just about cooked and wonderful

Of course I now have to leave it on to dry it out to make it Jerky I bet this does nothing good taste wise, but I promised it as a treat to a South African friend who loves Biltong.

I gave in after another 45 minutes it is probably not bone dry enough to keep indefinatly, but stuffed in a kilner jar and put in a fridge will manage to survive till the new years party!
