225g (8oz) shortcrust pastry (actually it doesn't need anything like this much)
300ml (1/2 pint) single cream
50g (2oz) bitter chocolate (nice with orange flavoured choc)
225g (8oz) soft brown sugar
2 tbsn cornflour
2 tbsn water
2 eggs
tspn vanilla essence
1 tbsn rum (if you want to make it grown up)
50g (2oz butter cut into small cubes)

Line a 9" flan case with the pastry, prick all over with a fork and blind bake for 20mins at 200�C. leave to cool.

Put the cream, chocolate and sugar in a heavy saucepan and stir over a low heat until melted.

Mix the cornflower and water to make a smooth paste.

Beat the eggs lightly.

Add the cornflower mix and egg to the pan and stir over a low heat until it thickens and you can no longer taste the cornflower. (The book suggests this will take 10 mins, it takes much longer in my experience). Do not allow it to boil.

Remove from the heat and stir in the butter, vanilla and rum if using.

Pour into the pastry case and leave to set.

Serve with double cream.

He stood on the tea-towel covered dish whilst mucking around in the car. There were Words exchanged.

Despite a lack of chocolate infused wisdom by Chez, I thought I'd risk it. It seemed to work OK! I used 1/2 the sugar and twice the chocolate too.

Is the cornflour necessary? It's quite a custardy mix without it. I may need to experiment...

I cut that down sunstantially too.

It has to be said. BW's birthday tea has not exactly been "lite".
