Apple Crumble Muffins.

300 grams plain flour
2 tsp baking powder
2 tsp ground cinnamon
pinch salt
4 eggs
100 mls sunflower oil
250 gs caster sugar
2 tsp vanilla essence
1 1/2 cups of stewed apple

Topping:
50 grams of butter
75 grams plain flour
25 grams of muscavado or Demerara sugar
50 grams rolled oats

Sift flour, baking powder, cinnamon and salt into a bowl. In another bowl whisk eggs, oil, vanilla, sugar and apple, then fold in the flour, don't over mix. Put in muffin cases, sprinkle the topping on and bake for 25 mins at 170 C.


I haven't made these, but was passed the recipe. I'm going to try them with rhubarb, instead. Sort of posting as filing system.

I'm assuming RC has had another clear out, and the ADHD gang have migrated.

Don't worry,they don't come in 'recipes', it's a bit too, wossname.

Funnily enough that is what I was going to scream, before I realised you weren't offering to make them for someone.

I made these apple muffins last week - minus the crumble topping.

really nice moist and appley, and freeze well.

Good to know that they freeze well.

Otherwise they just have to be eaten
