Had some on for 5 weeks in a prover, not come out very even, ranging from black and chewy to black to brown.
I figure that in an unheated kitchen, the device:

has kind of struggled to maintain temperature.

But it's interesting stuff.

I know a commercial composter that uses his piles for making black garlic (in sealed jars). He claims it's absolutely the perfect conditions.

I've never even heard of it. Do you eat it like you do normal garlic?

It's a lot milder, you can eat the cloves like sweets.

No. Use it as a garnish or a Raw flavour. I’m not sure I’d cook with it. It’s like a mild garlic with a complex, balsamic sweetness. Sainsbury’s has it currently.

Or buy some of it. Soak some ordinary raw garlic in food colouring. Play russian roulette.

Single bulb. Cardboard boxed. By the regular garlic

Look online for Balsajo Black garlic, they do tubs of it.

Oh is that how it works. So can you plant it at any time of the year or do the usual garlic rules apply?
