Griddled Corn Cakes (Thomasin Miers Mexican Recipe)

Made this twice now and it turned out really well. They look the same as American Pancakes and can be served in a savoury or sweet context. I prefer savoury. I think they would also be rather good with some chopped chilli and some finely chopped spring onion or chives or various herbs in them.

140 g plain flour
90 g polenta
1/2 tspn salt
2 tspn baking powder
1/2 tsp bicarbonate of soda
1 tbsp brown sugar*
60 g melted butter**
300ml buttermilk or milk mix***
1 egg

Sieve flour, polenta, baking powder & bicarb together. Add salt and sugar. Mix

Make a well in the middle and mix through the egg.

Slowly combine the milk mix into the batter.

Add melted butter and mix through.

Cook in a medium warm non stick frying pan as you would an American pancake.




*recipe calls for 2 but I think it works better with 1
**(reduced from 75g because you remove 1 tbspn to lightly brush the frying pan during cooking but I tend to do a light brush of oil)
*** 250ml milk, juice of 1 lemon and make up to 300ml with yoghurt - set aside for 5 minutes before use.
