I picked about 10 Carob Pods. I have dried them out in the dehydrator and I'm ready to lightly roast them for better depth of flavour and to grind them into powder. Anyone have any favourite recipes they are willing to share?

Just had to have a read of what they are Shan as I've never heard of them before. What do they taste like?

About what Sean said. I chewed on a bit crushed in the pestle and mortar and they have a quite a rich earthy (in a good way not a sheep dropping sort of way) taste and are very very sweet. I'd say the only comparison to chocolate is in the colour. They are certainly sweet enough to be used as a sugar replacement.

asking how you came to that comparison seems ungentlemanly

I have an excellent sense of smell. A little too good.
