Along the same lines, but going the dairy and veg only route, I make a not bad mixed broccoli cheese.
Cook in your normal way until just tender any broccoli of your choice, or that you have. I usually use a mixture of green broccoli and cauliflower and if I have any, some purple sprouters too. If you want a more hearty meal, wash a potato or two and cut into chip sized pieces and cook with the broccoli.
For a good meal for two people I use 1 heaped tablespoon cornflour, add a little light flavoured oil and them gradually add about 1/2 pint milk, taking care to keep it smooth by adding slowly at first with constant stirring. Bring to the boil stirring constantly and thin down using the liquid from the broccoli to a thick pouring consistancy. Grate about 2-4oz of cheese of your choice and add a little to the sauce.
Drain the broccoli, put in an oven proof dish, and cover with the white sauce. Sprinkle the remaining grated cheese on top and put under a grill or in an oven at gas mark 6 for about 20 minutes or until the cheese starts to brown. |
