amounts are flexible and per large snack size portion

2 rashers of good dry cure smoked back bacon
2 good sort of dried desert dates, stones removed and the inside given a very sparse pinch of mixed spice
2 bacon width slices of parmigiano 1/4 inch thick

from the eye end wrap date and cheese in the bacon as a roll and cook off in an electric griddle or similar until just melting and a bit browned on the outside

cook a handful of mac or curly pasta to 7/8ths done in water, rest then drain

mix tsp spoonful of cornflour, 2 tsp spoonful grated parmesan, 100ml soya milk, black pepper

add a bit of good salted butter to drained pasta and stir, put pre mixed sauce ingredients in warm pasta pan ,bring to simmer with lots of stirring, cook until just done
put in small grill proof dish on top of the bacon rolls

top with tsb spoonful of parmesan dust and a bit of black pepper

grill medium hot until just browning and evenly heated through

rest a little while

i have low tastes and like the post apocalypse cheese mac in a box from a px but the above is pretty good:D

Along the same lines, but going the dairy and veg only route, I make a not bad mixed broccoli cheese.

Cook in your normal way until just tender any broccoli of your choice, or that you have. I usually use a mixture of green broccoli and cauliflower and if I have any, some purple sprouters too. If you want a more hearty meal, wash a potato or two and cut into chip sized pieces and cook with the broccoli.

For a good meal for two people I use 1 heaped tablespoon cornflour, add a little light flavoured oil and them gradually add about 1/2 pint milk, taking care to keep it smooth by adding slowly at first with constant stirring. Bring to the boil stirring constantly and thin down using the liquid from the broccoli to a thick pouring consistancy. Grate about 2-4oz of cheese of your choice and add a little to the sauce.

Drain the broccoli, put in an oven proof dish, and cover with the white sauce. Sprinkle the remaining grated cheese on top and put under a grill or in an oven at gas mark 6 for about 20 minutes or until the cheese starts to brown.
