anyway the gravy has been made, not as a last minutes thing, as a thing in its own world

it was odd to make gravy as a "dish" but after a few hours i was rubbing it through a sieve .....

pig, onion and chestnut stuffings need to be cooked and put in my tiffin tins

a quick version of the date and fig is in a jar ready to chambre and the cranberry steeped in gin and stuff sauce needs cooking and balancing with honey

i am not sure SD realized what she unleashed when she said gravy and i said saucier

far easier than doing "chef"

and i am a reliable xmas saucier, unlike the two i had to laugh at, the rest of that story is best left untold

You do take gravy seriously! As I always cook joints over water, that and a bit of water from the greens makes a good thin gravy without any additions as far as I am concerned. Husband does the cooking Christmas Day, so I only get called in for the delicate bits like preparing and cooking the sprouts etc. and dishing up.

it turned out ok, i was asked why it was nice and the 30 second gin and turkey fueled explanation did not properly cover the simple method and ingredients list, i did manage to mention it takes a full shift and a half to cook it

when i write it up for them, i will pop it in recipes, it is based on good trade kitchen style and works with most critters and amounts

the cranberries bletted,, bashed a bit, steeped in gin with a little salt and sugar and lemon zest for a couple of days in the fridge, then simmered for ten mins and sweetened to taste with honey is really nice
work time 25 mins, prep time 2 or 3 days

i have only ever read one of those, it was rather fun, i was living in a wrecked forest(storm)in a small damp caravan while working for crazy posh folk fixing their houses as a force one, it was interesting.

it was perfect for such a setting.

the second part of the polo pony story* is pretty funny and involves "failed john wayne" the police officer, loose horses on a lawn, me upside down in a ditch in a defender with a scrap toilet beside my head, and a few other details that put the narrative together if they are in the right order

* part one is just "how not to greet and feed 3 frisky ponies" , i managed about 3 yards into the field i had let them access as i took them 2 buckets of "carefully measured and mixed" breakfast.
