this is a start on the subject, there are good books some of which inform this along with finding what actually works

some basics

there are savage and effective ways to harvest them, here is not the place for those

as sustainable but not legal this one has been known to take a dinner for two sized fish from a stream less than a couple of feet deep and a foot wide
by hand requires quiet crawling along the edge of the water, trout are sensitive to on land stuff, and good intel by eyeballing the stretch before work
crawl, reach under the edge gently and working upstream try to detect a fish from below, if you contact one slide a gentle touch towards its head, which is probably pointing upstream, until you are in the middle of the body
grip firmly with thumb between two pairs of fingers and fold it so as it cannot slither away, flip it onto the bank, find it(that can be interesting), dispatch it with thumb on the back of the neck and forefinger in mouth for a neck snap(tis kind and instant)

ok legally with a licence, and access to the water

this does not cover sport

3 options , dry, wet or wet if the waders leak
complex mixture of geography and health and safety along with abilities and choice as well as circumstances.
getting to where you can get to the fish is important

learn to read the geography
learn to place the fish in that geography

if hunting with bait or lure, where do they live, and what do the ones that live there eat?
observation and autopsy answer those questions

imho most trout in small streams eat smaller trout and terrestrials
a brandling or earthworm will work(accidental live baiting is devastatingly effective)

kit depends on the size of the water and the way it is accessed, tiny water handline or gnome rod, a few meters across by 50 m linear, fly rod(use a short one if there are tree issues)
that gives the options of fly style casts, spring casts, trotting etc
getting the hunting bit where it needs to go is important

payload, there are many suggestions this one is simple and reliable in a variety of situations

long shank barbed hook with about a 5mm dia hook radius
10 lb leader(weed, rocks, tangled flotsam etc)
worm, learn how to bait up different shapes and do not be shy of tieing some or all of it on, it needs a "bisto moment", a bit of wiggle and to not fall off (if you get this right not falling off for 30 seconds is enough)

in most small streams there is water under a few feet deep and deep bits, whichever the bait needs to be presented to the fish there
sometimes i would use a few split shot as a sinker into a deep and/or energetic pool or subsurface wheelpit, for shallow i use a slice of a cork and a bit of dayglow wool as a visible float, deep do it by touch

work the bait through the water by whatever means, on the bank using a cast and the flow is effective, get it to the fishy places

work the water, this is not set up the rig and settle down, dont thrash the water cover it, if 2 passes do not get a result move onto the next flow or cast

there are good books etc, practice helps a lot
subtleties are fine unless you want reliable food
ps i do not do catch and return, fish bothering is cruel
