Can anyone tell me what cuts of meat you get from a whole lamb and how many?

Many thanks

Hannah

Two legs, two full shoulders (lambs don't really have front legs), a few chump chops (maybe 4) about 7 loin chops per side, 5 or 6 cutlets per side, one neck, some belly, a couple of kidneys, some liver, and a heart.

You could reduce the legs to shanks and upper bits or rahter than the chops go for a saddle of lamb.

And shoulders can easily be split in two, necks can be chopped into 4, chumps done as a whole, livers sliced, etc.

Sean - did you get that diagram from a website as when I print it out the words are too blurry to see?
