Home-smoked pheasant breast for lunch today Finally managed to get my scratch-built smoker to work properly!!! Only taken me a year However, the results were well worth all the skinned knuckles, smarting eyes, swearwords, tears, stubbed-toes-from-kicking-stuff-in-a-temper, lost tools & battered thumbs. Now I need a salmon

I've smoked our last two Christmas turkeys. It turns bland and pretty tasteless into Gourmet !

Salmon are a lot bigger than pheasant breast - be sure you have the capacity before attempting such an awesome feat ...
