We had a party in the village at the weekend and there was a lot of bread left over. I jokingly said "I'll make a savoury b & b pud form it!" (it was mainly tomato & oregano).

So I tried it and IT"S REALLY GOOD! Anyone want the recipe?

Yes, I want the recipe, as we always have lots of leftover bread, and I'm always looking for nice things to take for lunches that aren't sandwiches (not every day, anyway!) and don't involve pastry (Eaten in moderation in this house, as its not a low fat food!)

OK this is what I did:

about half a loaf of sun dried tomato & oregnano bread, thickish slices
a pot of creme fraiche (450 ml, I think)
2 eggs (in this case 1 med. hen's and 1 duck)
1 thinly sliced & fried onion
olive oil
seasoning

Fry the bread in the olive oil, not soaking it but just enough oil to stop it sticking, to brown it a little. Layer in a pan or oven-proof dish. Mix the eggs and creme fraiche together with seasoning and pour over the bread. Bake, uncovered, at about 400F for aprox. 20 mins or until it's as brown as you like it.

It was really yummy with pork belly.

Obviously, you can use any type of bread you like and probably put other veg in: mushrooms & peppers would be nice. You could also add chopped bacon or some such and make it a one-pot meal. I'm going to do more experiments!

Perfect - I can make tomato and basil bread for cheese sandwiches, and then make the pudding with the rest of it - it'll save me wondering what to have on it for breakfast!

(tomato, basil and marmalade, tomato basil and jam, tomato basil and marmite (?)............)
