hi all , anyone have a recipe for carrot chutney, Ive been asked to add some to my ever growing chutney list.

I would think that most chutney recipes could be adapted if the carrots are diced quite small. From memory, Branston's and Pan Yan both contain a fair amount of diced carrot.

You could dice very finely or grate.

Ill have to experiment I think all the recipes on the net seem to be indian with lots of spices

2 1/2 lb of carrots
4 0z fresh ginger shredded
250 ml white wine vinegar
grated rind and juice of 2 lemons
150 ml water
400grms light brown sugar
4 tlbs honey
2 tlbs coriander
1 tlbs salt
3-4 birds eye chillis
3 tlbs chopped almonds (opional)
put carrots + all other ingredients in bowl(omiting the chillies and almonds)
mix well cover and stand overnight
next day put in saucepan and bring to boil then simmer for 20 mins
raise the heat and biol hard for 10-15 mins till most of liquid has evaporated
grind chillies and add with almonds to the panmix well for 10 mins
ladel into hot serilized jars and seal
ready in a month if you can wait that long

That's the Oded Schwartz recipe, isn't it?
If so, it is really, really good. Best chutney in the world for a cheese sandwich.

i managed to get a copy earlier this year from usa

some really good recipes
