I'll let you know in a few weeks time. I'm keen to try young dandelion leaves as when I tried blanching them this year they got munched by slugs and snails. Revenge is mine bwahhahaaaa!

Ok, I'll loose the spinach (they've pretty well ignored it anyway) and drop some dandelion in. Off to take some pics now.

Would snail & mushroom (st georges) soup work or would there be too many soft chewy things? I ask as one with a decicious bellyfull of creamy mushroom & veg soup in me (smug).

ps found some more st. g shrooms at a new site this morn.

Such a soup would kind of work, but I'd be looking for a more intense mushroomy flavour to do justice to the snails; something like Agaricus augustus or a boletus, or even puffball.

If I were to make such a soup with St. Georges then I'd probably try adding some porcini stock cube (get it from an Italian style delhi).

When I add snails to a risotto, I cut them up small; I don't especially like the texture of snails, but I like the flavour.

Whereabouts in Leicester are you Mat? We were there at the weekend and went for a short potter (in high heels and posh clothes) to see if there was anything exciting, we only found goslings though.

Bugs - I'm in Aylestone, near the cricket ground; guess you were on the canal near DMU (goose central)? Couple of swans nesting a bit further north / downstream if you got that far.

Thanks for the offer Simon but I've been keeping an eye on my 'livestock' in the back garden. If Mat is still posting in a week I'll give it a go.

Actaully, it's been quite good thinking about doing this. Now if I find a snail if it's small it goes to the hens, if it's a plump little fella off it gos to the lush part of the garden to fatten a little. I'm almost a snail shepherd.

So, what sort of dog do I need?

i think that escargot that is cooked well tastes like a piece of fine beef steak!

don't over cook them or they'll go all chewy on you.

i prefer mine lightly sauteed in garlic butter served in their shells with a few capers mmmmmm

I caught alitle bastard in the greenhouse last night. He was tucking into Basil seedlings, had three leaves in his gob when I caught him. In my weakness, I stomped him into the floor. If I had been stronger like TD, (more in touch with The Force) I'd have fed him leaves for days, then eaten his liver with a fine Chianti!!.....slobber slobber slurp slurp!!
