My neighbours have an open barn with about 200 pigeons in there. They are going to let me 'visit' with my air rifle. If I shoot say, 50 pigeons for the pot what's the best way of processing them? Should I pluck them all or just cut off the breast meat? Or a mixture of both?

Which ever method you feel you have the time for. Breasting is obviously the least time consuming.

For the amount of meat on the rest of the carcass I personally don't bother with plucking & cleaning.
Cut the breasts off I say.

Removing the breast 'crowns' is almost as easy as cutting out the individual breasts and gives you a nice double portion on the bone.
