Ingredients
6oz sugar
1.5oz plain flour
1oz butter
Grated rind and juice of 1 large lemon
2 eggs separated
6 fluid oz or 9 brimming tbsp milk
Recipe
Mix together sugar, flour, butter shredded into tiny pieces, lemon rind and juice and egg yolks. Beat well.
Add milk gradually, beating well.
Fold in firmly-whisked eggg whites.
Butter a 2 pint souffle dish and pour in the mixture.
Pour 2 inches of water into a small roasting tin, and stand the pudding mixture in it.
Bake at Gas 4, 180C. 40 minutes or there abouts, until golden and firm on top.
Allow to stand for 5 to 10 minutes before serving.
Comments
Letting it stand for a bit before serving is essential in my opinion.
