Ingredients
2 oranges
6 eggs
200g granulated sugar
200g ground almonds
2tbsp plain flour (optional)
1tsp baking powder
Recipe
Scrub the oranges thoroughly and place in a pan of cold water.
Bring to the boil and simmer for one hour.
Drain and allow to cool.
Cut the oranges in half and remove the pips.
Whizz them in a liquidiser until pulpy.
Heat oven to 180C/Gas Mark 4.
Beat the eggs and sugar together until pale.
Add orange pulp and almonds and stir well.
Sift in flour and baking powder and stir again.
Pour batter into a buttered and floured 24cm springform tin.
Bake for about an hour, until the top is firm to the touch.
Allow to cool, turn out and dust with icing sugar.
Comments
You can leave the flour out completely if you wish.
