Ingredients
3 lemons
8oz (225g) granulated sugar
4oz (100g) butter, cubed
3 eggs + extra yolk if small
2 tsp (10ml) grated fresh ginger
Recipe
Cook lemons on 100% High for 1 minute.
Grate and squeeze juice. Place rind and juice in a bowl, add sugar and butter.
Cook on 100% High for 3 minutes.
Beat in strained eggs along with the ginger.
Cook on 100% High for 4 minutes, whisk every 45 seconds.
When thick, pour into hot, sterilised jars, cover with a waxed paper disc, seal and store in fridge. Enjoy!
