Ooo, all those on the veg rack, sounds nice. The squash has been there for 'a while' (hmmm, I won't qualify a while), so soup might be a good way to use it up.

Always seems like a good idea to buy one, then it sits there whilst everything else is being used up!

I know, I know. It's lovely. But I never seem to get round to making it, while the poor celeriac gets more and more shrivelled until it's only just about fit for soup.

An onion sweated in garlic butter (or onion and garlic in butter)
Equalish quantities of potato and sweet potato
Chicken or veg stock
Couple of sprigs rosemary - I use 2 about 4 inches long
You can add carrots if you wish, warms the colour up

Cover and simmer till all tender.

Remove stalks but leave leaves in and wiz the lot well - adjust consistancy with water or milk, salt and black pepper to taste.

I like it strong on the rosemary and never measure anything.

Nice and warming on a cold day! Enjoy.
