This is a one-dish dish into which you can put just about anything - its probably my all time favourite. In Singapore/Malaysia its served with noodles but its far better with spuds.
Ingredients for 4-6 people:
Singapore Laksa paste (from chinese supermarkets)
Tin Coconut milk - organic is best by far for this as its creamier.
Couple of large sweet potatoes (help to make it smooth)
2 lbs potatoes
Chicken thighs/drumsticks (1 each person)
or
Piece of salmon per person and some prawns
Green veg of your choice - chard is the best I think but spinach/spring cabbage/sprouting broc is good too. Chop into medium pieces.
Peel and chop both types of potato into 1 inch chunks. Cover with water and boil up for 15/20 minutes.
Add laksa paste (about 100gm - more if you like it hotter) and stir in. Then add your meat/fish and other ingredients except coconut milk. Bring back to boil and simmer for 20-30 minutes (less if using fish). Add coconut milk for last 5 minutes.
Serve up! I can guarrantee you will want second helpings!
