Get a scratch comb from your local builder's merchant. It's ideal for stripping berries.

Tonight at some point I should destalk and freeze the rowanberries I picked yesterday. All sorts of things I should have done earlier and haven't - but will I do them this evening ?

I just use my fingers - I always know where they are, so it saves the exhausting special tool hunt before I start stripping.

I've got 5.3 kilos - I reckon that's enough for three gallons of wine. If I top up to three gallons and mash it, how many campden tablets should I add overnight to kill the wild yeasts before I add the 'proper' yeast tomorrow? I think one per gallon - or should it be two?

I never bother. If you're using one of the Gervin yeasts or similar it'll out-compete the wild yeasts before they even get going.

IIRC Campden tabs don't kill the wild yeasts, just stun them. You might as well just chuck the proper yeast in. (IMHO. YMMV. If it turns out disgusting it's your fault for taking advice from an internet weirdo.)
