We have recently been inspected and certified by our environmental health officer to produce and sell jams and chutneys, which was great news for us.
We also wanted to vacpac our pork from pigs which we rearwhen it comes back from the butchers so we can also sell this. we were told we can not touch the meat itself but can vacpac the already bagged meat. problem is the butcher doesnt break it down in small amounts ie 6 pork chops. How can I overcome this?

why cant you touch the meat?
is it bare hands that are the problem? wear gloves.
is it cross contaminating the jams area? specify different areas and stick to htem.
really need to know why the EHO wont let you touch the meat...
