| I eat the stems, they have the texture of beef, go well with beef funnily enough....not a problem with me as long as they're big enough and there's plenty of them. They dry well too as long as you don ... |

Could be red-cracking bolete, especially with the yellow pores turning blue.
Bay boletes a bit later in my experience, say mid-late August into October?

I really wouldn't be so sure, we had something similar growing near us until. a couple of weeks ago and they didn't look like velvet shanks to me. Underside had decurrent gills, like oysters.
