Le Buyer , about £30 , splendid , other cookware is available, tis good stuff

crepe pan

i use it on an induction hob, it would work on fire or other heat sources

nice metal, not too heavy not too light

it has developed a good "dome" and patina
the patina does need skilled maintenance

for batter "cakes" it is ace

for chapatis it is ace

not bad for a fry up either

i prefer it to cast iron ones i have had, well nice on induction
at some point i will have to try it on fire

steel, not sure what type, hot squashed into shape from nice metal

steel is rather diverse, top quality " wrought mild" is maybe a good description, it has taken to being worked and used and cared for and shaping and "seasoning" will have altered both the chemistry and crystallography of the metal

tis probably rather different metal to the billet that was thrown in the 50 ton forming press
Experiences change metal, this has been improved by its education

this was chosen well for making pans

trade quality, domestic are carp and expensive and a waste of food and time
this is the sort of kit i would want for trade or domestic
