well I don't know if you should cook 'em

I think I heard of 'em being grilled a while ago but I wouldn't eat the ruddy things raw or cooked to be honest

Unfortunately something raided my bucket of snails yesterday so I'll not be able to try them this weekend. Not sure if we have a weightlifting thrush or if it was a fox (I assume they'll eat snails). I'll collect some more for next weekend and tie down the cover this time.

(Queue comments of you should have used a proper rifle on 'em ya idiot. Mind you, I think I could just about manage the lead needed to shoot a snail at full speed ).

Two observations:

1) My snails don't seem to want to eat the lettuce I've given 'em. Typical, they only want to eat it growing in the garden.
2) Two of my little dinner guests are mating Have they no shame.

There was an interesting bit in 'Notre Jardin' this month on the Burgundy snail 'Escargot de Bourgogne'.

In Wallonie, they may only be captured between 1 August and 30 September. However, teachers (unsure whether that means biology or domestic science) may catch no more than ten between 15 May and 15 June.

Better late than never, reckon I'll start saving them tomorrow.

The thought of actually eating them really does make me feel quite queasy but I'm forever telling little'un not to say he doesn't like something till he's tried it so I reckon I ought to at least give it a go.

Well tonight was the night. The little dinner guests have had 10 days purging themselves with lettuce (interestingly they didn't eat the shop stuff but loved home grown).

I placed them into boiling water for 4 minutes and then removed from their shells. I then added the homeless ones to a small risotto with some garlic.

I tried them, but, well, erm, they were, well. Taste wise, they were fine but they were still very, very slimy. I'm sure I can still feel 'em.

Anyway I can make them less slimy or will they only be an emergency food?

Boiling in brine for two hours is recommended by Epicurious.com, as is baking for five minutes at 450 degrees. Coverring with grated cheese which melts over them also deslimes.

Two hours, would they be worth the fuel? Yet another reason for a wood stove.
